The short version

Text is a good candidate because letters are thin. Even a long caption covers relatively few pixels, so there is plenty of surrounding background for the fill to work from. Painting over the whole line in one stroke works better than trying to trace individual characters.

How to do it

Questions

Should I trace each letter?
No, one wide stroke across the whole line is both faster and better. Tracing letters leaves slivers of background between them that read as noise.
Will text on a photo come out cleanly?
Over sky, wall, blur or plain colour, usually invisibly. Over detailed texture you will see a soft patch where the line was.
Can it remove text and keep what is underneath?
Whatever the text covered is not in the file, so it is reconstructed rather than recovered. On plain backgrounds that distinction does not matter.
Does it handle outlined or shadowed text?
Yes, but include the outline and shadow in your selection. Leaving the drop shadow behind is the usual mistake.
